Tasty Tuesday recipe-Torqued Pani Popo
Torqued Pani Popo
Pani Popo. The name is cute, but what is it? Pani Popo is a gooey, sticky roll that literally means bun coconut. These rolls are cooked in a sweet coconut milk until golden brown. In Bumpy Landings by Don Carey, Jordan seems to be blown about by every wind that passes by. When he flies Kehau to another Hawaiian island (against his mother's wishes) he steps in and helps Kehau's family make a batch of pani popo (and boy are they impressed). The sticky concoction is symbolic of the torque (moment of force) that propels Jordan toward the goals he wants for himself. This is my second attempt at creating this new-to-me recipe. The first batch turned out soggy--ick! I decided to try cooking the rolls in a bundt pan, simliar to the way I make monkey bread. It turned out delicious, with a golden brown crust on top and a gooey coconut sauce on the bottom.
24 count frozen dinner rolls or ½ batch of Magic Raised Rolls
6 Tablespoons coconut, divided
¼ cup sugar
1 Tablespoon cornstarch
1 10 oz can coconut milk
½ cup water
Prepare a bundt pan with cooking spray and sprinkle 2 Tablespoons of coconut along the bottom (this will be the top when inverted). Place 12 of the 2 inch balls of dough in the bundt pan. Spray the dough with cooking spray and 2 Tablespoons of coconut. Repeat with the last 12 balls, spraying and sprinkling with coconut one last time. Follow the directions on the frozen rolls or if you use Magic Raised Rolls let the dough rise for 30 minutes.
Combine the cornstarch and sugar and mix into the milk and water. When the dough has doubled in size, pour the liquid mixture evenly over the roll dough. Cook in a preheated 350’ oven for 30 minutes. Allow pani popo to cool for ten minutes. Place a serving dish over the pan and invert the rolls onto the plate. Serves 24.

Bumpy Landings by Donald J Carey

Bumpy Landings by Don Carey is anything but bumpy. The writing is smooth and flowing and I lost myself in Jordan MacDonald’s Hawaiian world.
First off, I love Hawaii so I just soaked in the culture and setting that Carey deftly wove into the background. I was immediately drawn into the story and soon found myself relating to Jordan and his flight plights.
One of the things I love about Hawaii is the food and Carey included the food culture into the book. I recognized favorite Hawaiian foods and learned about new ones like pani popo, a sweet coconut bread.
I am not a big fan of male protagonists but Jordan is likeable and easy going and I fell into rhythm with his character right away. Readers will have no trouble reading a tropical romance from a guys point of view.
Jordan experiences all of the ups and downs of returning home from a religious mission, attending college while staying at home with mom and the obvious absence of his deceased father, dating girls who might not have his best interests in mind, and wondering how to win over the girl his heart aches for. Jordan’s voice is refreshing and his heart is in the right place. You will find yourself routing for this dreaming yet tentative hero.
Jordan’s mother and girlfriend, Heather, are controlling and try to rule over him. Even though I can see why they act the way they do, their characters feel a bit two-dimensional. When Jordan and his mother talk things through I felt like she was a poster board character instead of an actual force in his life.
The scenes in the flower shop where Jordan worked and in the Polynesian Cultural Center were fun and added extra interest in the story. I get the feeling that Carey worked or frequented both places when he lived in Hawaii.
There were several times in the story that I thought I knew where the story was going and I was pleasantly surprised each time the story took a twist in a different direction.
I was happy when Carey informed me that there will be a sequel to Bumpy Landings (no word yet as to publication date)—not so much because I am dying to know what happens next, but because I feel like Jordan is an old friend that I want to stay in touch with.
Bumpy Landings is fresh and clean, like a tropical wind.

Tasty Tuesday-Jagged Ham
Vi, from Possession by Elana Johnson, has never tasted meat before and when Jag tells her that the delicious food is called ham, she doesn’t want him to know how clueless she is. The meat is only the beginning. Vi grew up in a world where exposing your skin to the sun is frowned upon and touching another person is forbidden. When she meets Jag, she begins to question everything that she knew to be true. Jagged Ham is inspired by a recipe my mother used to make when company would come for dinner. Simple to prepare, the meat is impressive and tastes delicious.
Jagged Ham
3 chicken breasts
Salt and pepper
½ pound lean ham lunchmeat
1 pint sour cream
1 can cream of chicken soup
Dried rosemary
Cut each chicken breast in half horizontally, making 6 pieces of thin chicken. Salt and pepper the chicken and roll up lengthwise. Wrap each chicken roll with a slice of ham and place them in a crock pot that has been coated with cooking spray. Mix the sour cream and soup together and pour over the meat in the crock pot. Sprinkle the dried rosemary over the top. Allow to cook on low for 6 hours or high for 4 hours. Serve with rice or noodles.

Food to eat while reading: Jagged Ham
Tag-you’re it. In Possession by Elana Johnson, Vi lives in a society where Thinkers want to control humankind in order to protect them from themselves. Vi wants to control her own destiny—one that includes Zenn. But when she is arrested for being out after dark and kissing a boy (gasp!), she gets “tagged” with a tracking device. When Vi discovers that the Thinkers are brainwashing Zenn, the pieces don’t add up. In order to find out what the Thinkers hiding and why they are targeting her, Vi has to team up with egotistical Jag from the Badlands.
Elana Johnson has been busy getting ready for the June 7th launch of her debut novel Possession. When I caught up with the local Utah author, I asked her what inspired Vi’s story. Elana says, “I asked, ‘What if people had no free will?’ And from that emerged Vi, a girl who would give almost anything to be able to make her own choices.”
Possession is unpredictable and gut-wrenching. Vi’s is the most distinct teen voice I’ve ever read and her character is dynamic and strong, but with endearing flaws. The world in which Vi lives is creative without being overdone. Readers will question, with Vi, what is good and what is bad and what we can truly control.
I found Vi’s realization of her powers a believable progression and though I am not a techy person, I was intrigued by all of the technology in the novel.
It intrigues me how Elana switched to present tense, especially in the last chapter. It penetrated deep into the character. I might try out that device in my own writing.
Possession’s cover is striking. “I think it’s haunting,” Elana says. “It’s taken this iconic butterfly—a symbol of happiness and freedom—and trapped it in ice. But, there’s a drop at the bottom, and it’s cracked. So the images give the impression that the beautiful thing inside can fight back—and win.”
The romance in Possession is not your typical love triangle. The circumstances that Vi finds herself in make her relationships with Zenn and Jag is poignant and melancholy. You will find yourself routing and crying for both.
I love Jag! He’s exasperating and endearing. My favorite section of the book is when Jag and Vi are in prison and she is forced to change her ideas about “bad boys” and even tanned skin. I wish that there were more of this interaction between Vi and Jag and I coasted on the memory of it when I found some of it lacking later on in the book.
When I reached the end of Possession, I didn’t know what to think. I literally gasped when I read the last page. How could it end like this? I wondered. I am still unsure of my opinion on it. I don’t want to spoil the ending for others, so I’ll just say go out and read it and let me know what you think. When I asked Elana if there is a sequel to Possession, she said, “Not really. The second book (a companion) will take place in the same story world as Possession, but there will be a new narrating character, with a new story all their own.”
The companion book, Fugitive, is expected to be published in June 2012.
What to expect:
Possession is a fast-paced ride for readers who enjoyed The Hunger Games and The Maze Runner series. The romance is exciting and clean. There is some moderate swearing. Possession is a fun pick for summer reading.

Can you tell me, briefly, about your journey to publication?
My journey has been filled with twists and turns, but surprisingly hasn’t been that long. I think this is because of my pitbull nature: Once I sink my teeth into something, I don’t let go until I get what I want. This is both a blessing and a curse.
I began writing in December 2007. I wrote the first draft of POSSESSION (my third novel) in April 2008, in only 17 days. I proceeded to query literary agents with a different novel—and everyone said no. Well over 150 people said no.
Rejection is just part of the publishing business.
So I cleaned up POSSESSION over the course of many months, and began querying literary agents with it. 188 rejections later, I got an offer of representation from my agent. Two months later, we submitted the book to 12 editors. My first response was a yes, so I can say that I’ve never had an editor reject me—which is a good thing, because I had over 300 literary agents do that!
Since the sale of POSSESSION, the journey has been nothing short of a white-knuckled ride on the biggest roller coaster you can imagine. And I’ve loved every minute of it.
What inspired you to write Vi’s story?
I’d just finished a dystopian novel, though I had no idea that was even a genre. I did a bit of research, and found this type of futuristic, oppressive-society, fight against the man type of novel fascinating. Now, I just needed a world for mine.
So I played the “What If?” game a lot of authors play with themselves. And I asked, “What if people had no free will?” My brainwashing society evolved from that.
And from that, emerged Vi, a girl who would give almost anything to be able to make her own choices.
Why do you write for young adults?
Writing is like free therapy for me. It’s a way to empty myself of any and all emotion. And who feels emotion more powerfully than teenagers? Uh, no one. So that age group became the perfect place for my emotional dumping ground.

Now the big question: Does Possession have a sequel?
Not really. Once you read the book, I think you’ll understand why a sequel wouldn’t really work.
You recently sold a second book. Can you tell us anything about it?
I did just sell another book. It’s a companion novel to POSSESSION. A companion is just a little bit different from a sequel. The second book will take place in the same story world as POSSESSION, but there will be a new narrating character, with a new story all their own. I will say that the companion novel does have some sequential elements, and you will see some characters in the companion that you see in POSSESSION. I will not say who…
Will there be more than one companion book to Possession?
The goal is to develop POSSESSION into a trilogy, so I think it’s a safe bet to say that yes, there will be a third companion novel to POSSESSION. Again, a companion, not a sequel. If you’ve read Carrie Ryan’s companion trilogy (THE FOREST OF HANDS AND TEETH, Random House), my series will evolve in much the same way.
What is the best thing about being published?
The best thing about being published is seeing my name on the front cover of my book, and knowing that I worked really hard to get to that point.
What is your favorite food to eat while reading/writing?
Chocolate. If I can’t have that, I want sour patch kids.

Beautiful Creatures by Kami Garcia and Margaret Stohl
Food to eat while reading: Rosemary Lemon Roasted Chicken

Beautiful Creatures is all about setting. I love the southern backdrop. I’ve never been to the South so I don’t know if Garcia and Stohl are true to the culture, but I love how the authors immersed me in the town of Gatlin, South Carolina. Gatlin is its own character in the book. Ravenwood manor is romantic and mysterious and who wouldn’t love to have a library like Uncle Macon’s?
The writing feels natural and moves along at a nice pace. I wanted to keep reading and spent more than a few late nights with the book. The story is deliciously unpredictable and I eagerly anticipated how Ethan and Lena were connected and what would happen to them.
A wide array of characters people Beautiful Creatures—from Amma, the voo-doo housekeeper and dream consuming Macon, to persuasive and sexy Ridley and the normal, loyal Link.
The powerful use of senses drew me in. The smell of lemons and rosemary, a haunting melody, and Lena’s necklace all made me feel as if I were actually there.
I love historical fiction and though this is probably not classified as such, I eagerly absorbed the civil war flashbacks and the links between the generations.
Though I am not generally a fan of a teen male protagonist, Garcia and Stohl pulled it off nicely, perhaps because we were inside of Lena’s head so frequently. The use of telepathy in a love story was a nice touch.
The verdict: Prepare to be taken away to a time and setting you’ve never experienced. Beautiful Creatures immerses you in the deep South and casts a story you won’t soon forget.

Tasty Tuesday-Rosemary Lemon Roasted Chicken
When Ethan and Lena from Beautiful Creatures experience connections to their Civil War ancestors, the scents of lemon and rosemary linger. The two flavors pair wonderfully with chicken in this hurry-up and make it dinner recipe. I recommend cooking the chicken in a cast-iron pan—it browns the chicken and makes for a great sauce.
Rosemary Lemon Roasted Chicken
1 whole (3‒4 pound) chicken
Salt and pepper to taste
1/4 cup olive oil, divided
2 tablespoons unsalted butter, divided
Juice of one lemon, divided
2 teaspoons fresh rosemary, chopped
2 cloves garlic, smashed and peeled
Pinch of salt
Preheat oven to 400°. Using kitchen shears, cut along both sides of the chicken’s backbone to remove it. Open the chicken's legs and spread the bird down flat, skin side up. Pat dry with paper towels; season generously with salt and pepper.
Heat a large, oven-proof skillet over high heat. Add 1 tablespoon olive oil and 1 tablespoon of the butter. Add chicken, skin-side down, to skillet. Let it brown without moving, about 3 minutes. Turn chicken; transfer skillet to oven.
Roast chicken until golden brown and cooked through, about 40 minutes. Transfer chicken to a serving plate and let it stand 10 minutes.

Rosemary Lemon Roasted Chicken
1 whole (3‒4 pound) chicken
Salt and pepper to taste
1/4 cup olive oil, divided
2 tablespoons unsalted butter, divided
Juice of one lemon, divided
2 teaspoons fresh rosemary, chopped
2 cloves garlic, smashed and peeled
Pinch of salt
Preheat oven to 400°. Using kitchen shears, cut along both sides of the chicken’s backbone to remove it. Open the chicken's legs and spread the bird down flat, skin side up. Pat dry with paper towels; season generously with salt and pepper.
Heat a large, oven-proof skillet over high heat. Add 1 tablespoon olive oil and 1 tablespoon of the butter. Add chicken, skin-side down, to skillet. Let it brown without moving, about 3 minutes. Turn chicken; transfer skillet to oven.
Roast chicken until golden brown and cooked through, about 40 minutes. Transfer chicken to a serving plate and let it stand 10 minutes.
